Brew Tip of the Week
This week’s brew tip comes from Matthew Barry. After listening to another coffee podcast, Matthew decided to try blooming his coffee for 5 minutes in an Aeropress, then transferring the coffee to a Hario V60 and brewing as usual with the device from there.
This ended up being a little bit of the best of both worlds- immersion and pour over. Here’s the recipe he shared with us and that we tried:
- 20 grams of medium ground coffee placed in Inverted Aeropress
- 50 grams of water at 200-205 degrees
- Stir to saturate grinds
- Extended bloom for 5 minutes
- During that time, pre-wet Hario V60 filter
- Push entire mixture out of Aeropress into V60
- Single pour of 250 grams water at 200-205 degrees

Coffee Review- La Colombe
For our coffee review, Mike bought some La Colombe Mocha Draft Latte from Sprout’s for us to try. It was absolutely fantastic, but I took exception to their claim of having “cold-pressed” espresso coffee in their drink. Having said my peace, I gave credit where it was due- this drink is delicious.
Orange Cactus Coffee Update- The new KingCup
Mike ordered a bunch of samples from Genuine Origin to begin dialing in our next King Cup. They included:
- Colombia Narino
- Honduras Las Botijas
- Honduras Aquilino
- Honduras Mata de Platano
- Costa Rica El Cuminate
- Kenya New Gatanga
- Kenya AA Thaitu
- Ethiopia Yergacheffe natural
Well, after drinking all of them in one sitting with my wife and my man JD Garcia and his wife, we all liked the Las Botijas and Aquilino from Honduras and the AA Thaitu from Kenya. Independently, Mike agreed that those were the best three King Cup competitors.
So, Mike decided to order the Kenya AA Thaitu and the Honduras Aquilino. Those will be our two new future King Cup offerings. I think they’re fantastic and that you’re going to like them a lot as well.
Coffee Thoughts- Creator vs Critic
I wanted to talk a little bit about being a creator of content versus being a critic of content that others have created. some have said that if you’re a true artist, you can’t be critical of others. You just create art and move along.
I thought this relevant for us because we started our journey through Specialty Coffee as consumers only. now, we’re slowly transitioning into being producers as well. Trying to balance that inner creator and critic is our goal for the show.

After meeting with my Certified Public Accountant and having my bacon saved by her from the IRS, I decided it was high time to give a quick legal update on out work. We’ve formed an LLC. This offers some legal liability protection and is a pass through set for taxation. Frequently, those two points are misunderstood. We likely misunderstand them as well, but we shared what we knew as best we knew.
