In Episode 95 of the Daily Ristretto, I talked about trying Polish Aeropress Champion Jan Szurek’s recipe. Jan combined 30 grams of coffee with 135 grams of water at 188 degrees. Stir for 5 seconds, and start plunging at the minute mark, taking 25 seconds to slowly press. Then add 200 more grams of water. This produces a pretty strong up. 10-1 or 11-1, depending on how much you add, but wow! To me, that’s a strong cup. He also uses water additives, and I suggest using Third Wave Water added to distilled water for yours.
Jan also used a Kenya Kaguyu by Koppi Coffee Roasters in Sweden. He used a Commandant Grinder set on the 26th click. This is a grinder I’d never heard of before. It’s a pretty pricey hand grinder available for about $250. And of course, if you don’t have an Aeropress, you should get one.
